Bourbon Grill Marinade

This one is great on Rib Eye, Sirloin, Flank, Skirt or Round Steak. You can soak your meat in a ziploc bag up to all day (for Skirt or Round), or as little as 2 hours.

  • 1/2 C Bourbon
  • 1/4 C Soy Sauce
  • 1/3 C Pineapple Juice (fresh is best!)
  • 1 T Dark Brown Sugar, or more to taste
  • 2 Clvs Fresh Garlic, crushed
  • 1 or 2 Larger Steaks, or up to 6 Small Steaks

Pierce meat with fork generously on both sides.

Whisk together until all ingredients are well blended. Add to meat in a ziploc bag and gently rub marinade into the meat. Refrigerate until 30 minutes before cooking. Let meat come to room temperature. Sear flat sides quickly on a grill, skillet or oven broiler until a nice brown crust forms. You still want it rare to medium rare inside. Remove from heat and let rest 5-10 minutes. For Large or Skirt Steaks, slice across the grain into thin, 45 degree slices.

Lemon-Soy Sauce Marinade

This one is great on Sirloin, Flank, or Round cuts. You can soak your meat in a ziploc bag up to all day, or as little as 2 hours.

  • 1/2 C Soy Sauce
  • 1/4 C Olive Oil
  • 1/3 C Lemon Juice
  • 1 T Dried Onion Flakes
  • 1 tspn Dry Mustard
  • 1 tspn Freshly Ground Pepper
  • 1 or 2 Sirloin, Flank, or Round Steaks, or Top Round Roast

Pierce meat with fork generously on both sides.

Whisk together til oil is well blended into other ingredients. Add to meat in a ziploc bag and gently rub marinade into the meat. Refrigerate until 30 minutes before cooking. Let meat come to room temperature. Sear flat sides quickly on a grill, skillet or oven broiler until a nice brown crust forms. You still want it rare to medium rare inside. Remove from heat and let rest before slicing across the grain into thin, 45 degree slices.

Coffee Dry Rub

compliments of Jordan Swim, Vestals Foods. Use this rub for Steaks or Gourmet Ground Burgers

  • 1 T Freshly Ground Coffee Beans (We love Oak Cliff Coffee Roasters’ beans!)
  • 2 tspns Dark Brown Sugar
  • 2 tspns Freshly Ground Pepper
  • 1/2 tspn Ancho (or other) Chile Powder
  • 1 tspn Chopped Fresh Oregano (or 1/3 tspn dried))
  • 1 tspn Kosher Salt
  • Dash Cumin, Spanish Smoked Paprika & Allspice

4-5 Steaks or GG Burger Patties

Mix Dry Rub ingredients in small bowl and rub on all sides of room temperature meat of your choice. Grill, broil or pan sear to rare to medium rare. There should be a beautiful brown crust on the outside, pink on the inside.

Top Round Roast - London Broil Method

Cooking times based on 2” thick roast. Marinate roast overnight in Lemon-Soy Sauce Marinade (see above).

Heat grill or broiler to high heat. Sear both flat sides for approximately 60 seconds, then move to low heat and alternate cooking 3 minutes per side for a total of 12-15 minutes You still want it rare to medium rare inside. Remove from heat and let rest before slicing across the grain into thin slices.
