 For those serious beef eaters that want to order a whole or half beef custom processed to one of our selected cutting orders, we offer the Reserve Club. At $5.25 per lb. for a whole beef (approximately 500 lbs) or $5.75 per lb. for a half beef (approximately 250 lbs), this is the most economical way to ensure that there’s always plenty of delicious NNB in the freezer. A non-refundable deposit is required prior to processing and receipt of that deposit initiates your Reserve Club membership. Typically Nitschke Natural Beef remains on pasture long enough to develop marbling and backfat consistent with Prime Grade beef. Should you prefer a leaner eating experience, Reserve Club membership allows you to specify your desired grade of finish.
 Approximately 125 lbs of NNB consisting of dry aged steaks, roasts and Gourmet Ground in roughly the same proportion as they come off the calf. A Mixed Quarter is $6.25 per lb and typically includes 12.5% steaks, including Top Loin (Strip), Sirloin, Tenderloin or Ribeye. 25% roasts, including Top Round, Chuck or Rump and the balance Gourmet Ground.
 Same proportions of steaks, roast, and Gourmet Ground as the Mixed Quarter but packaged for smaller households, $6.95 per lb. Reserve Club Beef, Mixed Quarters and 40 lb Samplers are delivered free within our Service Area (contact us for a map) by appointment at no extra charge.
 For those with limited storage capacity who are looking for an affordable way to enjoy the benefits of pasture finished beef we offer Gourmet Ground in 20 lb. lots. $5.50 per lb for 85% lean, $6.00 per lb for 92% lean. This is available at our home base in the Dallas neighborhood of North Oak Cliff. Call or email first to be sure that we’re there (rather than at the ranch!) and that we have what you need.
 Our Mixed Quarter and 40 lb Sampler packages don’t include specialty cuts such as organ meats, osso buco, marrow bones or oxtail. Fortunately, our NNB cows do. If this is your thing, call us! We’ll get the rare cuts you need on an as-available basis. Briskets, skirt, & flank steaks are also sometimes available by special request.

 Our beef is available from time to time at Whole Foods Market stores in the Southwest Region. Call or email Nitschke Natural Beef for dates of availability at the Whole Foods Market store nearest you. Our beef at Whole Foods Market is in the meat case labeled “Grassfed Local” and is not labeled as Nitschke Natural Beef. The fresh beef marketed through the Whole Foods Market “Grassfed Local” program is typically leaner than the frozen beef marketed under the Nitschke Natural Beef label.

All other orders can be picked up at our Dallas home by appointment. We are located in North Oak Cliff near Methodist Medical Center. Arrangements can be made for delivery; please call or email to inquire. Free Delivery in our Service Area by appointment is standard for 40# Samplers and larger orders. At this time we do not offer shipping as an option.
Our calves typically achieve the desired level of finish from January through June. We try to maintain some inventory in the off months, but we encourage serious beef eaters to join the Reserve Club to be sure that their household has enough Nitschke Natural Beef on hand to make it until the next crop is ready. Statistics indicate that the average American eats between 50 and 65lbs of beef a year. NNB customers often determine early on that they are clearly “above average”. 1 cubic foot of freezer space holds approximately 25 to 30 lbs of beef.
